- In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon and set it aside, leaving the grease in the skillet.
- Add the chopped onion to the skillet and cook until softened.
- Add the ground beef to the skillet and cook until browned. Drain any excess fat.
- Stir in the ketchup, tomato paste, Worcestershire sauce, Dijon mustard, beer, and beef broth. Let the mixture simmer for 10-15 minutes.
- Stir in the cubed cheddar cheese until it melts.
- Spoon the mixture onto the brioche buns and top with crispy bacon. Serve warm.
