  • 4 slices hickory smoked bacon uncured, coarsely chopped
  • 12 stems asparagus ends trimmed and cut into bite-size pieces
  • 4-6 cloves garlic minced
  • 8 cups fresh baby spinach
  • 1/2 cup dry white wine
  • 1 1/4 cups heavy cream
  • 4 teaspoons Cajun spice
  • 1 cup fresh Parmesan grated

  • Prepare the rigatoni pasta by following the instructions on the package. Ensure it's well-drained before setting aside.
  • In a sizable skillet set over medium heat, begin by sautéing the bacon pieces until they start to crisp, about 8 minutes. Introduce the asparagus and continue to cook, stirring occasionally, for another 8 minutes. Then, lower the heat to add and cook the minced garlic for a minute, followed by the spinach until it just begins to wilt. Transfer this mixture onto a plate and set aside.
  • Utilize the same skillet to deglaze with white wine, carefully scraping up the flavorful browned bits from the bacon. Blend in the heavy cream and Cajun spice, simmering until the sauce thickens to your liking. Remove from heat, gradually stir in the grated Parmesan until it melts into a smooth sauce.
  • Combine the bacon and asparagus mixture with the creamy sauce, then gently fold in the drained rigatoni. Serve this luscious Cajun pasta hot, garnished with extra Parmesan if desired.
