  • 2 cups all-purpose flour Can substitute up to 1/4 cup with whole wheat or use gluten-free flour blend.
  • 1 cup sugar Can be replaced with 3/4 cup brown sugar for deeper flavor.
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt Skip if using salted butter.
  • 1/2 cup unsalted butter, softened Use salted butter for added flavor.
  • 2 large eggs For egg-free option, use 1/2 cup unsweetened applesauce + 1 tsp baking powder.
  • 1 teaspoon vanilla extract
Optional Mix-ins
  • 1/2 cup chopped nuts Use walnuts or pecans.
  • 1/2 cup raisins Can replace with dried cranberries or chocolate chips.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment or lightly grease it.
  2. Whisk together the flour, sugar, baking powder, baking soda, and salt in a large bowl.
  3. In a separate bowl, cream the softened butter until smooth. Beat in the eggs one at a time, then stir in the vanilla until combined.
  4. Add the dry ingredients to the wet in parts, folding gently after each addition until just mixed. Stop when you no longer see streaks of flour.
  5. Fold in the chopped nuts and raisins if using, distributing them evenly without overworking the dough.
  6. Use a tablespoon or small cookie scoop to drop rounded spoonfuls of dough onto the prepared baking sheet, leaving about 2 inches between each for spreading.
  7. Bake for 10–12 minutes, or until the edges are lightly golden and the tops look set.
  8. Transfer cookies to a wire rack and let cool completely before serving.

Notes
