Dressing Ingredients
  • 3 tablespoons Honey
  • 2 tablespoons Dijon mustard
  • 2 tablespoons Lemon juice
  • 1/4 cup Olive oil
  • Salt and pepper to taste

Method
 

Preparation
  1. In a small bowl, whisk together honey, Dijon mustard, lemon juice, olive oil, and a pinch of salt and pepper to make the dressing.
  2. Wash and pat dry the fresh spinach.
  3. Slice the apple thinly, keeping the skin on for extra nutrition and color.
  4. Coarsely chop the walnuts or pecans, optionally toasting them for extra flavor.
Combining
  1. In a large mixing bowl, combine the spinach, apple slices, and chopped nuts. Add crumbled feta and sliced red onion if desired.
  2. Drizzle the prepared dressing over the salad and gently toss to combine, being careful not to bruise the leaves.
  3. Taste and adjust seasoning with more salt, pepper, or dressing as needed.
  4. Serve immediately for best freshness.
