Dressing Ingredients

  • 3 tablespoons Honey
  • 2 tablespoons Dijon mustard
  • 2 tablespoons Lemon juice
  • 1/4 cup Olive oil
  • Salt and pepper to taste

Preparation

  • In a small bowl, whisk together honey, Dijon mustard, lemon juice, olive oil, and a pinch of salt and pepper to make the dressing.
  • Wash and pat dry the fresh spinach.
  • Slice the apple thinly, keeping the skin on for extra nutrition and color.
  • Coarsely chop the walnuts or pecans, optionally toasting them for extra flavor.

Combining

  • In a large mixing bowl, combine the spinach, apple slices, and chopped nuts. Add crumbled feta and sliced red onion if desired.
  • Drizzle the prepared dressing over the salad and gently toss to combine, being careful not to bruise the leaves.
