Ingredients
  

Dry Ingredients
  • 2 cups All-purpose flour
  • 1 tsp Baking powder
  • 1 tsp Baking soda
  • 1 tsp Ground cinnamon
  • 1/2 tsp Ground nutmeg
  • 1/4 tsp Salt
Wet Ingredients
  • 1 cup Granulated sugar
  • 1 cup Brown sugar
  • 1 cup Vegetable oil
  • 4 large Eggs
  • 1 cup Pumpkin puree
  • 1 cup Peeled and diced apples
  • 1 cup Chopped pecans
  • 1 tsp Vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Grease the bundt pan well to prevent sticking.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In a large mixing bowl, combine the granulated sugar, brown sugar, and vegetable oil. Beat until well combined.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in the pumpkin puree and vanilla extract.
  7. Gradually add the dry ingredients to the wet mix, stirring until just combined.
  8. Fold in the diced apples and chopped pecans.
  9. Pour the batter into the prepared bundt pan and smooth the top.
Baking
  1. Bake in the preheated oven for about 55 to 60 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow the cake to cool in the pan for about 15 minutes.
  3. Invert the cake onto a wire rack and let it cool completely.

Notes

Feel free to add mini chocolate chips or a sprinkle of walnuts for variation. Serve with whipped cream or ice cream for extra indulgence.
