Ingredients
  

For the crust
  • 2 9-inch 9-inch pie crusts Store-bought for convenience
For the filling
  • 6 medium medium apples A mix of Granny Smith for tartness and Honeycrisp for sweetness
  • 3/4 cup granulated sugar Optionally, use 1/2 cup granulated + 1/4 cup brown sugar
  • 2 tbsp all-purpose flour Can substitute with 1½ tbsp cornstarch
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 pinch salt
  • 1 tbsp lemon juice Prevents browning and brightens flavor
  • 2 tbsp unsalted butter Cut into small pats for dotting over the filling
  • 1 egg beaten with 1 tbsp water For the egg wash
  • Coarse sugar For optional sprinkling on top

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Prepare the apples: Peel, core, and slice the apples into thin wedges. Mix them in a large bowl with sugar, flour, cinnamon, nutmeg, salt, and lemon juice until well combined.
Assembly
  1. Place one pie crust in a 9-inch pie pan and fill it with the apple mixture. Dot the filling with butter.
  2. Top with the second crust: Cut several slits in the top crust or create a lattice design. Brush with the egg wash and sprinkle with coarse sugar if desired.
Baking
  1. Place it in the preheated oven and bake for 15 minutes.
  2. Reduce the temperature to 350°F (175°C) and continue baking for 35-45 minutes, or until the apples are tender and juices are bubbling through the slits.
Cooling
  1. Let it rest for at least 2 hours before slicing, so the filling can set.
