Preparation
- Preheat your oven to 425°F (220°C).
- Prepare the apples: Peel, core, and slice the apples into thin wedges. Mix them in a large bowl with sugar, flour, cinnamon, nutmeg, salt, and lemon juice until well combined.
Assembly
- Place one pie crust in a 9-inch pie pan and fill it with the apple mixture. Dot the filling with butter.
- Top with the second crust: Cut several slits in the top crust or create a lattice design. Brush with the egg wash and sprinkle with coarse sugar if desired.
Baking
- Place it in the preheated oven and bake for 15 minutes.
- Reduce the temperature to 350°F (175°C) and continue baking for 35-45 minutes, or until the apples are tender and juices are bubbling through the slits.
Cooling
- Let it rest for at least 2 hours before slicing, so the filling can set.
