Ingredients
  

For the Crust
  • 2 9-inch 9-inch pie crusts Store-bought for convenience
For the Filling
  • 6 medium apples (a mix of Granny Smith and Honeycrisp) About 6 cups sliced
  • 3/4 cup granulated sugar Or use 1/2 cup granulated + 1/4 cup brown sugar for added depth
  • 2 tbsp all-purpose flour Or 1½ tbsp cornstarch as a thickener
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 pinch salt
  • 1 tbsp lemon juice To prevent browning and brighten the flavor
  • 2 tbsp unsalted butter Cut into small pats for dotting
  • 1 egg beaten with 1 tbsp water For the egg wash
  • to taste coarse sugar For sprinkling on top (optional)

Method
 

Preparation
  1. If using store-bought crusts, let them thaw. For homemade, roll out your dough and fit it into your pie dish.
Filling Preparation
  1. In a bowl, mix sliced apples with sugar, flour (or cornstarch), cinnamon, nutmeg, salt, and lemon juice. Toss until the apples are well-coated.
Assembly
  1. Pour the apple mixture into the crust-lined pie dish. Dot the top with small pats of butter.
Covering
  1. Place the second crust over the filling. Seal and flute the edges. Make a few slits on top for steam to escape, then brush with egg wash and sprinkle coarse sugar if desired.
Baking
  1. Preheat your oven to 425°F (220°C) and bake for 15 minutes.
  2. Lower the temperature to 350°F (175°C) and bake for another 35-45 minutes or until the apples are tender and the crust is golden brown.
Cooling and Serving
  1. Allow the pie to cool slightly before serving. Enjoy warm or at room temperature.

Notes
