  • 2 cups all-purpose flour
  • 1.5 cups sugar
  • 1 cup chopped pecans
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter, softened Make sure the butter is softened for best results.
  • 3 large eggs
  • 1 cup apples, peeled and chopped Use fresh apples for best flavor.
  • 0.5 cup buttermilk Extra buttermilk can keep the cake moist.
  • 1 teaspoon vanilla extract
  • 1 cup caramel sauce Use for drizzling.

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  • In a large bowl, mix together the flour, sugar, baking soda, baking powder, cinnamon, and salt.
  • In another bowl, cream the butter until smooth, then add the eggs one at a time, mixing well after each addition.
  • Stir in the buttermilk and vanilla extract.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the chopped apples and pecans.
  • Pour the batter into the prepared baking dish and smooth the top.

Baking

  • Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool before drizzling with caramel sauce.

Serving

  • Serve warm, optionally with vanilla ice cream on top.

Notes

Store leftover cake in an airtight container at room temperature for up to 3 days or refrigerate for about a week. Reheat slices in the microwave before serving.
