Method
Prepping the dough
- In a bowl, whisk flour, salt, and granulated sugar.
- Cut in chilled diced butter with a pastry cutter or two forks until pea-sized pieces remain.
- Add 4 tablespoons ice water and mix until dough just comes together; add up to 2 more tablespoons if dry.
- Shape into a disk, wrap, and chill at least 30 minutes (longer is fine).
Chilling and rolling
- Preheat the oven to 400°F (200°C) with a baking sheet inside.
- On a lightly floured surface, roll chilled dough to about a 12-inch round (~1/8-inch thick).
- Transfer to parchment on a baking sheet.
Filling and assembling
- Toss sliced apples with lemon juice, cinnamon, nutmeg, and a pinch of sugar. Let sit 5 minutes to macerate.
- Pile apples in the center of the dough, leaving a 2-inch border. Fold the edge over the apples in pleats, leaving the center exposed. Press gently to seal.
- Brush the crust with beaten egg and sprinkle the apple center with brown sugar.
Baking the galette
- Bake on the preheated sheet for 30–40 minutes, until crust is golden and juices bubble.
- Let cool 10–15 minutes before slicing so juices set slightly.
