Ingredients
  

For the crust
  • 1.5 cups all-purpose flour Backbone of the crust for structure and tenderness.
  • 0.5 teaspoon salt Brightens the apples’ sweetness.
  • 0.25 cup granulated sugar Sweetens the dough and adds flavor.
  • 0.5 cup unsalted butter, chilled and diced Cold butter = flakier crust.
  • 4 to 6 tablespoons ice water Just enough to bind the dough.
For the filling
  • 3 to 4 medium apples, peeled and sliced A mix of Granny Smith and Honeycrisp works well for tartness and texture.
  • 1 tablespoon lemon juice Keeps apples from browning and adds brightness.
  • 1 teaspoon cinnamon Classic apple partner.
  • 0.25 teaspoon nutmeg Rounds the spice profile.
  • 1 tablespoon brown sugar For a caramelized topping.
  • 1 egg beaten with a splash of water For a golden-brown crust.

Method
 

Prepping the dough
  1. In a bowl, whisk flour, salt, and granulated sugar.
  2. Cut in chilled diced butter with a pastry cutter or two forks until pea-sized pieces remain.
  3. Add 4 tablespoons ice water and mix until dough just comes together; add up to 2 more tablespoons if dry.
  4. Shape into a disk, wrap, and chill at least 30 minutes (longer is fine).
Chilling and rolling
  1. Preheat the oven to 400°F (200°C) with a baking sheet inside.
  2. On a lightly floured surface, roll chilled dough to about a 12-inch round (~1/8-inch thick).
  3. Transfer to parchment on a baking sheet.
Filling and assembling
  1. Toss sliced apples with lemon juice, cinnamon, nutmeg, and a pinch of sugar. Let sit 5 minutes to macerate.
  2. Pile apples in the center of the dough, leaving a 2-inch border. Fold the edge over the apples in pleats, leaving the center exposed. Press gently to seal.
  3. Brush the crust with beaten egg and sprinkle the apple center with brown sugar.
Baking the galette
  1. Bake on the preheated sheet for 30–40 minutes, until crust is golden and juices bubble.
  2. Let cool 10–15 minutes before slicing so juices set slightly.
