Wet Ingredients
  • 2 large eggs
  • 1/2 cup milk
  • 2 cups peeled and diced apples Choose sweet varieties like Honeycrisp or Granny Smith.
For Frying and Glazing
  • Vegetable oil for frying Heat to 375°F (190°C).
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Method
 

Preparation
  1. In a large bowl, mix together the all-purpose flour, baking powder, salt, cinnamon, and granulated sugar until well combined.
  2. In a separate bowl, whisk the eggs and milk together.
  3. Pour the wet mixture into the dry mixture, stirring gently until just combined—don’t overmix!
  4. Carefully fold in the diced apples, ensuring they’re evenly distributed.
Frying
  1. Heat vegetable oil in a deep fryer or a large pot to 375°F (190°C).
  2. Drop spoonfuls of the batter into the hot oil, frying only a few fritters at a time until they’re golden brown, which should take about 2-3 minutes per side.
  3. Once golden, remove the fritters and let them drain on paper towels.
Glazing
  1. For the glaze, whisk together the powdered sugar, milk, and vanilla extract until smooth and creamy.
  2. Drizzle the glaze over the warm fritters and serve immediately.
