Preparation
- Preheat your oven to 325°F (163°C). Grease a 9×13-inch baking pan with non-stick cooking spray.
- In a medium mixing bowl, sift together the flour, baking soda, cinnamon, nutmeg, and salt; set aside.
- In a large mixing bowl, beat together the vegetable oil, granulated sugar, and brown sugar using an electric mixer on medium speed. Incorporate the vanilla and eggs one at a time until fully mixed.
- Gradually add the dry mixture, ensuring to mix thoroughly between additions. The batter will be quite thick—this is normal.
- Using a sturdy wooden spoon, gently fold the chopped apples into the batter.
- Spread the batter into your prepared pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Glaze Preparation
- While the cake is baking, prepare the glaze. Combine all glaze ingredients in a medium saucepan. Heat over medium heat, stirring frequently, until it begins to simmer. Remove from heat and let it cool for about 5 minutes.
- Pour the glaze over the warm cake straight from the oven.
- Slice and serve warm or at room temperature.

Notes
