Ingredients
  

For the crust
  • 1.5 cups graham cracker crumbs
  • 1 tablespoon granulated sugar
  • 0.5 teaspoon ground cinnamon
  • 0.5 cups butter (melted)
For the cheesecake
  • 16 oz. cream cheese (room temperature)
  • 0.75 cups granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 teaspoons vanilla extract
  • 2 large eggs
For the apple filling
  • 2 medium apples (diced) Tart varieties like Granny Smith work best.
  • 2 teaspoons fresh lemon juice
  • 1.5 teaspoons ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 2 tablespoons brown sugar (packed)
  • 1.5 teaspoons cornstarch
For the crumble topping
  • 0.5 cups flour
  • 0.25 cups quick oats
  • 0.25 cups brown sugar (packed)
  • 0.5 teaspoon ground cinnamon
  • 2 tablespoons butter (melted)
Optional
  • Caramel sauce for drizzling

Method
 

Crust
  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, combine graham cracker crumbs, sugar, and cinnamon. Stir in melted butter until the mixture is well combined.
  3. Press the mixture into the bottom of a greased muffin pan, making sure it’s even. Bake for 8-10 minutes. Remove and let cool.
Cheesecake
  1. In a large mixing bowl, beat the cream cheese and sugar until smooth. Add cinnamon and vanilla, mixing well.
  2. Incorporate the eggs one at a time to ensure a creamy batter. Set this aside.
Apple Filling
  1. In another bowl, mix the diced apples with lemon juice, cinnamon, nutmeg, brown sugar, and cornstarch. Toss until the apples are coated.
Crumble Topping
  1. Combine flour, oats, brown sugar, and cinnamon in a bowl. Drizzle in the melted butter and mix until crumbly.
Assembly
  1. Pour the cheesecake batter over the cooled crust, then add a generous layer of apple filling.
  2. Sprinkle the crumble topping over the apples.
  3. Bake for 30-35 minutes or until set. Allow them to cool before removing from the pan.

Notes
