Ingredients
  

For the Pie Crust
  • 1 cup all-purpose flour 125 grams
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon kosher salt
  • 8 tablespoons unsalted butter (cold) 113 grams
  • 1/2 cup light brown sugar 100 grams
For the Pie Filling
  • 6 cups Granny Smith and Golden Delicious apples, thinly sliced 600 grams
  • 1 cup cranberries (fresh or frozen) 100 grams
  • 3/4 cup granulated sugar 150 grams
  • 1 teaspoon orange zest
For the Brown Sugar Crumble
  • 1/4 cup all-purpose flour 35 grams
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

Method
 

Prepare the Pie Crust
  1. In a bowl, combine the flour, cinnamon, nutmeg, and salt.
  2. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Stir in the brown sugar until just mixed.
  4. Press the dough into a pie dish and chill while preparing the filling.
Make the Pie Filling
  1. In a large bowl, toss the sliced apples with cranberries, granulated sugar, and orange zest.
  2. Allow this to sit for about 10 minutes to let the flavors meld.
Prepare the Crumble Topping
  1. In another bowl, mix the flour, cinnamon, and nutmeg.
  2. Cut in some cold butter until crumbly, then add this over the filling.
Assemble Layers
  1. Pour the apple-cranberry mixture into the chilled pie crust.
  2. Top with the crumble mixture, spreading it evenly.
Bake
  1. Preheat your oven to 375°F (190°C).
  2. Bake the pie for about 45-50 minutes, or until the apples are tender and the topping is golden brown.
Cool and Serve
  1. Allow the pie to cool slightly before serving to let the juices thicken.
