Method
 

Preparation
  1. Combine the chopped apples, brown sugar, ground cinnamon, and melted butter in a medium bowl. Toss until the apples are well coated and set aside.
  2. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter.
  3. In another bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, nutmeg, and salt.
  4. In a large mixing bowl, stir together the granulated sugar, eggs, vegetable oil, and vanilla extract until smooth.
  5. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
Baking
  1. Carefully fold in the apple mixture, ensuring even distribution.
  2. Spoon the thick batter into the prepared pan. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  3. If the bread is browning too quickly, loosely cover the top with aluminum foil.
