Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
Wet Ingredients
  • 1 cup granulated sugar Can be substituted with coconut sugar.
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened Make sure it's at room temperature.
  • 3 large eggs Can substitute with flax eggs or unsweetened applesauce.
  • 1 teaspoon vanilla extract
Main Ingredients
  • 3 cups chopped apples (peeled and cored) A mix of apple types is recommended for flavor.
  • 1 cup chopped pecans Can be substituted with walnuts or almonds.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In one bowl, mix the flour, baking soda, salt, and cinnamon until well combined.
  3. In another bowl, cream together the granulated sugar, brown sugar, and softened butter until smooth.
  4. Add the eggs to the sugar mixture one at a time, mixing in the vanilla extract afterward.
  5. Gradually combine the dry ingredients with the wet mixture until just blended; be careful not to over-mix!
  6. Fold in your chopped apples and pecans gently.
Baking
  1. Pour your batter into the prepared dish, spreading it evenly.
  2. Bake in the preheated oven for 45-50 minutes, or until a toothpick comes out clean when inserted into the center.
  3. Allow the cake to cool for a bit before slicing and serving.
