Ingredients
  

Main ingredients
  • ½ cup salted butter (softened)
  • 2/3 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 1/2 cups all-purpose flour
  • 1/2 cup Greek yogurt Can be swapped with sour cream for a tangy taste.
  • 1/4 cup milk
  • 2 medium Granny Smith apples (about 2 cups diced) Other apple varieties can be used for different tastes.
Spice mixture
  • 1/2 cup brown sugar (packed)
  • 1 teaspoon cinnamon
Glaze
  • 1 cup confectioners’ sugar
  • 3 tablespoons cream (or milk)
  • 1 teaspoon vanilla (white or dark)

Method
 

Preparation
  1. Preheat your oven to 350°F and prepare your 9x5-inch loaf pan with non-stick spray.
  2. In a large bowl, beat together ½ cup softened butter and 2/3 cup granulated sugar until smooth.
  3. Add the eggs, one at a time, mixing well after each addition.
  4. Stir in 1 teaspoon of vanilla extract, followed by the baking powder and flour. Mix only until blended.
  5. Gently fold in the Greek yogurt and milk until the batter is smooth.
Apple Preparation
  1. In a separate bowl, combine ½ cup brown sugar and 1 teaspoon cinnamon.
  2. Peel and dice the Granny Smith apples, then coat them in the brown sugar mixture.
Layering and Baking
  1. Pour half of the batter into the prepared loaf pan. Add half the apple mixture and half of the brown sugar-cinnamon mixture. Gently swirl with a knife.
  2. Repeat with the remaining batter and apple mixture.
  3. Bake for about 50-60 minutes, checking for doneness with a toothpick.
  4. If the top browns too quickly, cover it with foil.
Cooling and Glazing
  1. Let the loaf cool for at least 30 minutes.
  2. Whisk together the confectioners’ sugar, cream, and 1 teaspoon of vanilla to create a glaze, then drizzle over the cooled bread.
