Preparation
- Preheat your oven to 350°F and prepare your 9x5-inch loaf pan with non-stick spray.
- In a large bowl, beat together ½ cup softened butter and 2/3 cup granulated sugar until smooth.
- Add the eggs, one at a time, mixing well after each addition.
- Stir in 1 teaspoon of vanilla extract, followed by the baking powder and flour. Mix only until blended.
- Gently fold in the Greek yogurt and milk until the batter is smooth.
Apple Preparation
- In a separate bowl, combine ½ cup brown sugar and 1 teaspoon cinnamon.
- Peel and dice the Granny Smith apples, then coat them in the brown sugar mixture.
Layering and Baking
- Pour half of the batter into the prepared loaf pan. Add half the apple mixture and half of the brown sugar-cinnamon mixture. Gently swirl with a knife.
- Repeat with the remaining batter and apple mixture.
- Bake for about 50-60 minutes, checking for doneness with a toothpick.
- If the top browns too quickly, cover it with foil.
Cooling and Glazing
- Let the loaf cool for at least 30 minutes.
- Whisk together the confectioners’ sugar, cream, and 1 teaspoon of vanilla to create a glaze, then drizzle over the cooled bread.
Notes
For a nuttier touch, consider adding walnuts or pecans. This apple bread is delightful with butter or served with vanilla ice cream.
