Preparation
- In the bowl of your stand mixer, combine 1/3 cup granulated sugar, 1/2 cup warm water, 3 tablespoons honey, and 1 1/2 tablespoons active dry yeast. Mix well and allow it to stand for about 5 minutes until it becomes bubbly.
- Add 1 1/2 cups warm milk to the mixture and stir gently.
- Melt 5 tablespoons of unsalted butter in the microwave.
- Incorporate 2 cups of bread flour into the bowl, then turn on the mixer using the dough hook.
- Add the melted butter and 1 tablespoon salt, followed by 2 more cups of bread flour.
Kneading and Rising
- Mix and knead the dough for 7 to 10 minutes. If it’s too sticky, sprinkle in flour a bit at a time until you achieve a stretchy, soft ball.
- Let the dough rise, then shape it to make cinnamon bread, if desired.
Baking
- Shape the loaves, let them rise, and then bake until golden.

Notes
