Ingredients
  

For the yeast mixture
  • 1/3 cup granulated sugar
  • 1/2 cup warm water (110° to 120°)
  • 3 tablespoons honey
  • 1 1/2 tablespoons active dry yeast
For the dough
  • 1 1/2 cups warm milk
  • 8 tablespoons unsalted butter, divided 5 tablespoons for the dough, 3 tablespoons melted for topping
  • 1 tablespoon salt
  • 4 to 6 cups bread flour Adjust based on humidity
For the cinnamon topping (optional)
  • 1/4 cup granulated sugar
  • 1 tablespoon cinnamon

Method
 

Preparation
  1. In the bowl of your stand mixer, combine 1/3 cup granulated sugar, 1/2 cup warm water, 3 tablespoons honey, and 1 1/2 tablespoons active dry yeast. Mix well and allow it to stand for about 5 minutes until it becomes bubbly.
  2. Add 1 1/2 cups warm milk to the mixture and stir gently.
  3. Melt 5 tablespoons of unsalted butter in the microwave.
  4. Incorporate 2 cups of bread flour into the bowl, then turn on the mixer using the dough hook.
  5. Add the melted butter and 1 tablespoon salt, followed by 2 more cups of bread flour.
Kneading and Rising
  1. Mix and knead the dough for 7 to 10 minutes. If it’s too sticky, sprinkle in flour a bit at a time until you achieve a stretchy, soft ball.
  2. Let the dough rise, then shape it to make cinnamon bread, if desired.
Baking
  1. Shape the loaves, let them rise, and then bake until golden.

Notes
