Dough Ingredients
  • 1/3 cup granulated sugar
  • 1/2 cup warm water (110° to 120°) Ideal temperature for activating yeast
  • 3 tablespoons honey Can be substituted with maple syrup
  • 1 1/2 tablespoons active dry yeast
  • 1 1/2 cups warm milk
  • 8 tablespoons unsalted butter, divided 5 tablespoons melted, 3 tablespoons reserved for later
  • 1 tablespoon salt
  • 4-6 cups bread flour Add more if the dough feels sticky
  • 1/4 cup granulated sugar For topping
  • 1 tablespoon cinnamon

Method
 

Preparation
  1. In the mixing bowl of a stand mixer, add the 1/3 cup sugar, warm water, honey, and dry yeast. Mix gently and let it sit for about 5 minutes until bubbly.
  2. Warm the milk and add it to the yeast mixture, then stir well.
  3. Melt 5 tablespoons of butter in the microwave and add it to the mixture.
  4. Gradually add 2 cups of flour, using the dough hook to mix.
  5. Next, add the remaining melted butter, salt, and 2 more cups of flour.
  6. Turn on the mixer and knead for 7 to 10 minutes. If the dough feels sticky, sprinkle in flour, a little at a time, until it forms a stretchy ball.
  7. Allow the dough to rise until it doubles in size, then shape it as desired.

Notes

Store the bread in an airtight container at room temperature for up to 3 days. For longer storage, freeze slices with parchment paper between to prevent sticking. To reheat, thaw at room temperature or put back in the oven.
