Preparation
- Preheat the oven to 350°F (175°C). Grease an 8.5 x 4.5 x 2.5-inch loaf pan with non-stick spray.
- In a small bowl, whisk 1/3 cup brown sugar with 1 teaspoon cinnamon. Set aside.
- In a large bowl, use an electric mixer to cream 1/2 cup softened butter and 2/3 cup granulated sugar until light and fluffy (about 2–3 minutes).
- Beat in 2 eggs, one at a time. Add 2 teaspoons vanilla and mix until combined.
- In a separate bowl, whisk 1 1/2 cups all-purpose flour with 2 teaspoons baking powder.
- Add the flour mixture to the butter mixture and stir until just combined.
- Pour in 1/2 cup milk and mix until the batter is smooth.
Layering
- Pour half the batter into the prepared pan and spread evenly.
- In a small bowl, toss 2 cups chopped apples with 1 teaspoon cinnamon and 1 tablespoon granulated sugar.
- Scatter half the apple mixture over the batter. Spread the remaining batter over the apples.
- Top with the remaining apples and gently press them into the batter.
- Evenly sprinkle the reserved brown sugar–cinnamon mix over the top.
Baking
- Bake at 350°F (175°C) for about 1 hour, or until a toothpick inserted into the center comes out clean. If the top browns too quickly, tent with foil for the last 10–15 minutes.
- Cool in the pan for about 30 minutes, then transfer to a rack.
Glazing
- Whisk 1/2 cup powdered sugar with 1 tablespoon milk until smooth. Drizzle over the cooled loaf.
- Slice and serve.
