Preparation
- Preheat your oven to 350ºF and line a 9x5-inch loaf pan with parchment paper. Grease the parchment with cooking spray.
- In a small bowl, mix 1/3 cup light brown sugar and a heaping teaspoon of cinnamon. Set this cinnamon-sugar mixture aside.
- In a medium bowl, whisk together the all-purpose flour, salt, baking powder, 1 teaspoon of cinnamon, and baking soda. Keep it aside.
- In another small bowl, combine the diced apples, 2 tablespoons of sugar, and 1 teaspoon of cinnamon.
Baking
- In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy.
- Add eggs one at a time, along with the vanilla, incorporating fully after each addition.
- Gradually mix in the flour mixture in thirds, alternating with the buttermilk, until just combined and smooth.
- Pour half of the batter into the prepared loaf pan. Layer in half of the apple mixture and sprinkle with half of the cinnamon sugar. Repeat with the remaining batter, apples, and cinnamon mixture.
- Bake for 50-65 minutes, or until a toothpick inserted into the center comes out clean or with a few crumbs. Allow it to cool in the pan for 15 minutes before transferring to a wire rack.
- For the glaze, whisk together the powdered sugar, milk or heavy cream, and a dash of cinnamon. Drizzle over the cooled loaf and slice to serve.
