Ingredients

For the bread
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.5 cup granulated sugar
  • 0.25 cup brown sugar, packed
  • 0.5 cup milk Can be substituted with non-dairy milk.
  • 0.25 cup vegetable oil
  • 2 large eggs
  • 2 cups peeled and diced apples Substitutions with pears or other fruits are possible.
For the glaze
  • 0.5 cup powdered sugar
  • 2 tablespoons milk
  • 0.5 teaspoon vanilla extract

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
  2. In a large bowl, whisk together the flour, baking powder, salt, cinnamon, granulated sugar, and brown sugar until well combined.
  3. In another bowl, mix the milk, vegetable oil, and eggs until fully incorporated.
  4. Combine the wet ingredients into the dry ingredients. Stir gently until just combined, then fold in the diced apples.
Baking
  1. Pour half of the batter into the prepared loaf pan. If you’d like, sprinkle a layer of cinnamon sugar on top. Add the remaining batter and smooth the surface.
  2. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  3. In a small bowl, mix together the powdered sugar, milk, and vanilla extract until smooth for the glaze.
  4. Allow the bread to cool completely before drizzling the glaze over the top. Let it set before slicing!
