Ingredients
  

Wet Ingredients
  • 1 stick softened butter Use room temperature for best results.
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 each egg
  • 1 teaspoon vanilla extract
  • 1/8 cup vegetable oil Coconut oil can be used as a substitute.
Dry Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
Add-ins
  • 1/2 cup coconut flakes Feel free to swap out for nuts.
  • 1 cup semi-sweet chocolate chips Can substitute with milk or white chocolate chips.
  • 1/2 cup almond slices Chopped pecans can also be added.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine softened butter, granulated sugar, brown sugar, vanilla, egg, and vegetable oil. Mix well using a hand mixer until smooth.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this dry mixture into your wet ingredients, stirring until combined.
  4. Fold in the coconut flakes, chocolate chips, and almond slices.
  5. Roll the dough into ping pong-sized balls, slightly larger if you want these treats to be extra decadent.
  6. Place the balls onto your prepared baking sheet, spacing them a bit apart.
Baking
  1. Bake for 12 to 13 minutes, or until golden brown around the edges.
  2. Once done, let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Store in an airtight container at room temperature for up to a week. Freeze for up to three months. Don't overbake; cookies continue to firm up as they cool.
