Preparation
- Preheat the air fryer to 375°F (190°C).
- In a bowl, mix the soy sauce, olive oil, garlic powder, ginger, salt, and pepper.
- Marinate the chicken breasts in the mixture for at least 30 minutes.
- Meanwhile, cook the rice according to package instructions.
Cooking
- Place the marinated chicken breasts in the air fryer basket.
- Air fry the chicken for about 15-20 minutes or until cooked through.
- In the last 5 minutes of cooking, add the pineapple chunks and bell pepper to the air fryer.
Serving
- Once cooked, serve the chicken and pineapple mixture over the rice, garnished with chopped green onions.
