Ingredients
  

Main Ingredients
  • 2 pieces chicken breasts Boneless, skinless
  • 1 cup rice Use your favorite type
  • 1 cup pineapple chunks Fresh or canned
  • 1/2 cup bell pepper, diced Any color bell pepper
Sauce and Seasoning
  • 1/4 cup soy sauce Low sodium soy sauce can be used
  • 1 tablespoon olive oil Can substitute with another oil
  • 1 teaspoon garlic powder For flavor
  • 1 teaspoon ginger, minced Fresh ginger recommended
  • to taste Salt and pepper Adjust to your preference
Garnish
  • to taste Chopped green onions For serving

Method
 

Preparation
  1. Preheat the air fryer to 375°F (190°C).
  2. In a bowl, mix the soy sauce, olive oil, garlic powder, ginger, salt, and pepper.
  3. Marinate the chicken breasts in the mixture for at least 30 minutes.
  4. Meanwhile, cook the rice according to package instructions.
Cooking
  1. Place the marinated chicken breasts in the air fryer basket.
  2. Air fry the chicken for about 15-20 minutes or until cooked through.
  3. In the last 5 minutes of cooking, add the pineapple chunks and bell pepper to the air fryer.
  4. Once cooked, serve the chicken and pineapple mixture over the rice.
  5. Garnish with chopped green onions.

Notes

For more flavor, let the chicken marinate for longer if you have time. Adjust the amount of pineapple and bell pepper based on your taste.
