Ingredients
  

Main Ingredients

  • 2 pieces chicken breasts
  • 1 cup rice Cook according to package instructions.
  • 1 cup pineapple chunks
  • 1/2 cup bell pepper, diced
  • 1/4 cup soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Chopped green onions for garnish

Preparation

  • Preheat the air fryer to 375°F (190°C).
  • In a bowl, mix the soy sauce, olive oil, garlic powder, ginger, salt, and pepper.
  • Marinate the chicken breasts in the mixture for at least 30 minutes.
  • Meanwhile, cook the rice according to package instructions.

Cooking

  • Place the marinated chicken breasts in the air fryer basket.
  • Air fry the chicken for about 15-20 minutes or until cooked through.
  • In the last 5 minutes of cooking, add the pineapple chunks and bell pepper to the air fryer.

Serving

  • Once cooked, serve the chicken and pineapple mixture over the rice, garnished with chopped green onions.

Notes

For more flavor, let the chicken marinate for longer if you have time. Adjust the amount of pineapple and bell pepper based on your taste. You can add other veggies like broccoli or carrots for more color and nutrition. To store leftovers, let the dish cool down first. Place it in an airtight container and store it in the refrigerator. It will be good for up to three days. To reheat, you can use the microwave or air fryer until it’s warm.
