Ingredients
  

Main Ingredients

  • 2 pieces chicken breasts
  • 1 cup rice Jasmine, basmati, or brown rice can be used.
  • 1 cup pineapple chunks Canned pineapple can be used; drain before addition.
  • 1/2 cup bell pepper, diced

Marinade

  • 1/4 cup soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger, minced
  • to taste Salt and pepper

Garnish

  • to taste Chopped green onions

Instructions
 

Preparation

  • Preheat the air fryer to 375°F (190°C).
  • In a bowl, mix the soy sauce, olive oil, garlic powder, ginger, salt, and pepper. Marinate the chicken breasts in this mixture for at least 30 minutes.

Cooking

  • Place the marinated chicken breasts in the air fryer basket and cook for 15 minutes, flipping halfway through.
  • While the chicken is cooking, prepare the rice according to package instructions. Stir in the diced bell pepper and pineapple chunks during the last few minutes of cooking.

Serving

  • Once the chicken is cooked, let it rest for a couple of minutes before slicing.
  • Serve the chicken over the pineapple rice and garnish with chopped green onions.

Notes

Best served warm. Pairs nicely with steamed vegetables or a fresh salad. For extra crunch, consider adding chopped nuts or seeds on top before serving.
