Ingredients
  

For the Steak
  • 2 steaks 2 steaks (your choice of cut: ribeye, sirloin, filet mignon) Ribeye for marbling and flavor, sirloin for lean value, or filet mignon for tenderness.
  • 1 tbsp kosher salt Adjust to taste.
  • 1 tbsp freshly ground black pepper Adjust to taste.
  • 1 tsp garlic powder Optional: swap for granulated garlic and add dried thyme.
  • 1 tbsp neutral oil spray or brush Helps the rub stick and improves browning.

Method
 

Preparation
  1. Remove steaks from the fridge 20–30 minutes before cooking to bring to near room temperature.
  2. Pat both sides dry with paper towels for better crust.
  3. Lightly brush or spray the steaks with oil.
Applying the Dry Rub
  1. Mix salt, pepper, and garlic powder in a small bowl.
  2. Sprinkle evenly on both sides of the steaks and gently press the rub into the meat.
Cooking
  1. Preheat your air fryer to 400°F (204°C) for 3–5 minutes.
  2. Place steaks in a single layer in the air fryer basket.
  3. Cook at 400°F for 8–10 minutes for 1-inch steaks, flipping halfway for medium-rare.
  4. For 1.5-inch steaks, cook for 10–14 minutes, flipping halfway.
  5. Check the temperature with an instant-read thermometer to avoid overcooking.
Resting
  1. Transfer steaks to a cutting board and tent loosely with foil.
  2. Let rest for 5–10 minutes for steaks up to 1.5 inches; thicker cuts may need 10–15 minutes.
Serving
  1. Slice against the grain and serve whole or with a pat of compound butter, chimichurri, or a drizzle of balsamic reduction.
