Ingredients
  

For the Marinade
  • 1.5 lbs top sirloin or flank steak, sliced against the grain
  • ¼ cup pineapple juice
  • 2 Tablespoons lime juice
  • 1 Tablespoon olive oil
  • 1 Tablespoon soy sauce
  • 1 Tablespoon minced garlic
  • ½ Tablespoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste Salt and pepper
For Cooking
  • ½ red bell pepper, sliced
  • ½ green bell pepper, sliced
  • 1 onion, sliced

Method
 

Marinating the Steak
  1. In a bowl, mix pineapple juice, lime juice, olive oil, soy sauce, minced garlic, chili powder, cumin, and smoked paprika.
  2. Pour the mixture over the sliced steak and marinate in the refrigerator for 2-4 hours.
Preparing the Air Fryer
  1. Line the air fryer basket with foil.
  2. Place sliced peppers and onions in the basket. Spray lightly with oil and season with salt and pepper.
Cooking the Vegetables
  1. Set the air fryer to 400°F and cook the vegetables for 10 minutes.
Cooking the Steak
  1. Add the marinated steak on top of the cooked vegetables and cook for an additional 7 minutes.
Serving
  1. Serve the cooked steak and veggies on warm tortillas, topped with cheese, cilantro, sour cream, and salsa.

Notes

For extra flavor, consider adding chopped jalapeños to the marinade. Use flank or sirloin steak for best results. Slice the steak against the grain for tenderness.
