Preparation
  1. Place the baby potatoes in a microwave-safe bowl and cover them with a damp paper towel. Microwave on high for 5-7 minutes or until fork-tender.
  2. Allow the potatoes to cool slightly, then arrange them on a piece of parchment paper or waxed paper. Using a fork, gently smash each potato down.
  3. Brush the tops of the smashed potatoes with melted butter. Next, sprinkle salt, pepper, garlic powder, and herbs on top to taste.
Cooking
  1. Place the smashed potatoes in your air fryer in a single layer and set it to 400 degrees Fahrenheit.
  2. Cook for about 8-10 minutes, checking around the 6-7 minute mark to shake the basket and ensure even cooking.
Serving
  1. Once the potatoes are perfectly crispy, remove them from the air fryer and toss with extra butter and herbs if desired. Serve immediately.
