Ingredients
  

Potato Preparation
  • 1.5 pounds baby red potatoes, scrubbed clean and halved You can substitute with other small potatoes if desired.
  • 2 tablespoons unsalted butter, melted For grilling, use a quality unsalted butter.
Seasonings
  • 0.5 teaspoon dried oregano This adds an herby flavor.
  • 0.5 teaspoon garlic powder For extra flavor.
  • 0.5 teaspoon fine sea salt Adjust to taste.
  • 0.25 teaspoon ground black pepper For seasoning.
  • 0.5 cup finely grated fresh parmesan cheese, divided Reserve some for sprinkling on top.

Preparation
  1. Add the potatoes to a large bowl and toss with the melted butter.
  2. Mix in the oregano, garlic powder, salt, pepper, and 1/4 cup of the grated parmesan. Toss until the potatoes are fully coated.
Cooking
  1. Grease your air fryer basket with spray oil and add the potatoes, cut side down, in a single layer.
  2. Air fry at 380°F for 15 minutes.
  3. Carefully flip the potatoes over, sprinkle the remaining 1/4 cup of parmesan cheese on top, and air fry for another 5-7 minutes or until the potatoes are golden brown and fork-tender.

Notes

You can serve the potatoes as a side dish for dinner, and they pair well with grilled meats or roasted vegetables. For extra flavor, add fresh herbs or a squeeze of lemon. Store leftovers in an airtight container in the refrigerator for up to three days, reheating in the air fryer to restore crispiness.
