  • 2 cups cooked rice (preferably day-old or cooled) Using day-old rice helps achieve a better texture.
  • 2 tablespoons vegetable oil Divided into two tablespoons.
  • 1 small onion, diced For flavor.
  • 2 cloves garlic, minced For aroma and flavor.
  • 1/2 cup frozen peas and carrots Can be substituted with other vegetables.
  • 2 eggs beaten Scrambled into the mixture.
  • 2-3 tablespoons soy sauce Adjust to taste.
  • 1 teaspoon sesame oil For drizzling before serving.
  • 2 green onions thinly sliced For garnish.
  • 1/2 cup diced cooked chicken, shrimp, or tofu (optional) For added protein.

Method
 

Preparation
  1. Preheat your air fryer to 370°F (188°C).
  2. In a large bowl, combine the cooked rice with 1 tablespoon of vegetable oil and toss to coat.
  3. Spread the rice in the air fryer basket and cook for 5 minutes, shaking halfway through for even cooking.
  4. While the rice is cooking, heat the remaining oil in a skillet over medium heat. Add onions and garlic, and cook until fragrant (about 1-2 minutes).
  5. Push the vegetables to one side of the skillet and pour in the beaten eggs. Scramble until just set.
  6. Remove the rice from the air fryer and add it to the skillet. Stir in frozen peas and carrots, soy sauce, and any chosen protein (if using).
  7. Mix everything well and return the mixture to the air fryer basket.
  8. Cook for another 3-4 minutes at 370°F until everything is heated through and slightly crispy.
  9. Drizzle with sesame oil and top with sliced green onions before serving.
