Ingredients
  

For the cod
  • 4 pieces Cod fillets Or use any mild, firm white fish like tilapia or haddock
  • 1 cup Flour Can substitute with almond flour for gluten-free
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Paprika
  • 1 cup Panko breadcrumbs
  • 2 large Eggs
  • 1 piece Lemon For serving
  • as needed Oil spray

Method
 

Preparation
  1. Pat the cod fillets dry with a paper towel to help the coating stick better.
  2. In a shallow bowl, whisk the eggs and set aside.
  3. On a plate, combine the flour and spices (salt, pepper, garlic powder, onion powder, and paprika).
Dredging
  1. Take a fillet, dredge it in the flour mixture, then dip it into the whisked egg, allowing excess to drip off.
  2. Coat the fillet in panko breadcrumbs until fully covered.
Cooking
  1. Spray the breaded fish lightly with oil spray.
  2. Place a few pieces in the air fryer basket without overcrowding.
  3. Set the air fryer to 400°F (200°C) and cook for 10-12 minutes, flipping halfway through.
  4. Check that the fish is golden brown and flakes easily with a fork, spraying more oil if needed for extra crunch.
Serving
  1. Carefully remove the fish from the air fryer and serve with lemon wedges and a side of tartar sauce.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. Uncooked, breaded fish can be frozen for up to a month. Reheat in the air fryer for about 5 minutes at 350°F (175°C) for the best texture.
