Main Ingredients
  • 2 pieces boneless, skinless chicken breasts Pound to an even 1/2–3/4 inch thickness for even cooking.
  • 1 cup breadcrumbs Panko gives extra crunch; use gluten-free if needed.
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 1 cup marinara sauce Homemade or store-bought.
  • 1 cup shredded mozzarella cheese
  • to spray Olive oil spray Lightly spray the air fryer.

Method
 

Preparation
  1. Preheat the air fryer to 375°F (190°C).
  2. In a medium bowl, stir together the breadcrumbs, grated Parmesan, Italian seasoning, salt, and pepper.
  3. Pat the chicken breasts dry and press each breast into the breadcrumb mixture, coating both sides firmly.
  4. Lightly spray the air fryer basket with olive oil spray.
Cooking
  1. Place the chicken breasts in a single layer in the air fryer basket.
  2. Air fry at 375°F for about 10 minutes on the first side.
  3. Flip the breasts carefully and cook for another 5 minutes.
  4. Spoon about 1/2 cup marinara over each breast and sprinkle with 1/2 cup shredded mozzarella.
  5. Return to the air fryer and cook an additional 2–3 minutes until cheese is melted and bubbly.
  6. Remove and let rest for 2–3 minutes before serving.

Notes
