  • 2 lbs boneless and skinless chicken breasts You can substitute with chicken thighs if preferred.
  • 1 cup salsa Choose your favorite brand or make your own.
  • 1 packet taco seasoning Homemade or store-bought.
  • 1 can black beans Canned, rinsed, and drained.
  • 1 cup corn Frozen or canned works well.

Method
 

Preparation
  1. Place the chicken breasts at the bottom of your crockpot.
  2. Pour in your salsa generously.
  3. Sprinkle taco seasoning evenly over the chicken.
  4. Add the black beans and corn, stirring everything to combine.
  5. Cover the crockpot and set it to low for 6-8 hours or high for 3-4 hours.
  6. Once cooked, shred the chicken using two forks directly in the pot to let it absorb the flavors.
  7. Serve the shredded chicken in soft or crunchy taco shells or on top of your favorite salad.
