- In a stand mixer, cream together the softened butter, light brown sugar, and granulated sugar until the mixture is light and fluffy, about 2 minutes.
- Mix in the egg and vanilla extract until well combined.
- Gradually add in the flour, cornstarch, baking soda, and salt, mixing until everything is thoroughly combined.
- Gently fold in 1 1/2 cups of the red, white, and blue M&M's.
- Scoop golf ball-sized balls of dough onto a baking sheet, placing them a few inches apart. Top each ball with the remaining 1/2 cup of M&M's.
- Chill the dough for at least 30 minutes to help the cookies hold their shape.
- Preheat the oven to 350º F.
- Bake the cookies for 10-11 minutes, until the edges are set and the tops appear golden and dry.
- Remove from the oven and allow the cookies to cool for about 5 minutes before transferring them to a wire rack.
