Ingredients
  

For the Cookie Dough
  • 3/4 cup unsalted butter (softened)
  • 3/4 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 whole large egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups red, white & blue M&M's (divided)

Method
 

Preparation
  1. In a stand mixer, cream together the softened butter, light brown sugar, and granulated sugar until the mixture is light and fluffy, about 2 minutes.
  2. Mix in the egg and vanilla extract until well combined.
  3. Gradually add in the flour, cornstarch, baking soda, and salt, mixing until everything is thoroughly combined.
  4. Gently fold in 1 1/2 cups of the red, white, and blue M&M's.
  5. Scoop golf ball-sized balls of dough onto a baking sheet, placing them a few inches apart. Top each ball with the remaining 1/2 cup of M&M's.
  6. Chill the dough for at least 30 minutes to help the cookies hold their shape.
  7. Preheat the oven to 350º F.
  8. Bake the cookies for 10-11 minutes, until the edges are set and the tops appear golden and dry.
  9. Remove from the oven and allow the cookies to cool for about 5 minutes before transferring them to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to a week. They can also be frozen for up to three months.
