Ingredients

  • 2 lbs cauliflower florets cut into bite-size pieces
  • 1 box (8 ounces) cream cheese softened
  • 1/2 cup sour cream
  • 1 1/2 cups sharp cheddar cheese finely shredded
  • 1 1/2 cups Monterey Jack cheese finely shredded
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 6 slices crispy cooked bacon coarsely chopped
  • 1/4 cup fresh chives chopped, reserve one tablespoon for topping
  • Kosher salt and black pepper to taste

Instructions

  • Steam the cauliflower pieces until they are tender enough to be pierced with a fork, about 10 minutes. Ensure they are well-drained after steaming.
  • While preparing the cauliflower, preheat your oven to 425 degrees Fahrenheit and lightly grease a 9 x 13-inch baking dish.
  • In a large mixing bowl, blend the cream cheese, sour cream, both types of shredded cheese, garlic powder, and onion powder until the mixture is smooth and creamy. Carefully fold in the steamed cauliflower, half of the bacon pieces, and most of the chives. Season the mixture with kosher salt and freshly ground black pepper according to your preference.
  • Transfer the cauliflower mixture into the prepared baking dish, spreading it out evenly. Sprinkle the top with the remaining bacon pieces.
  • Bake the casserole without a cover for 20-25 minutes, or until you see the cheese melting beautifully.
  • Finish by garnishing the baked casserole with the reserved chives. Serve warm and enjoy the creamy, cheesy goodness with your loved ones.

Notes

For a lighter version, you can use low-fat cream cheese and sour cream. Additionally, feel free to adjust the amount of bacon and cheese to suit your dietary preferences.
