Preparation
- In a bowl, combine the sugar, butter, and egg yolk until well incorporated.
- Gradually add the flour and mix until a dough forms.
- Divide the dough evenly and roll it into two log shapes, about 1 inch by 4 inches long. Cover with plastic wrap and chill in the fridge for about 30 minutes.
Baking
- Preheat your oven to 350°F (175°C). Once chilled, remove the logs from the fridge and plastic wrap.
- On a shallow plate, sprinkle the 2 tablespoons of sugar. Roll the logs in the sugar to coat the outside.
- Using a sharp knife, cut each log into 3/8” slices and place them on a parchment-lined cookie sheet.
- Bake for approximately 10 minutes or until the cookies are lightly golden and baked through.
- Allow the cookies to cool on the sheet for about 5 minutes to set before transferring them to a cooling rack.

Notes
Store cookies in an airtight container at room temperature for up to a week. Dough can be frozen before baking. Monitor baking closely as ovens vary.
