Ingredients
  

For the cookie dough
  • ½ cup butter, soft (not melted) Use room temperature butter for best results.
  • ½ cup sugar for the dough
  • 1 large egg yolk at room temperature Ensure the yolk is at room temperature.
  • 1 ⅛ cup all-purpose flour
For coating (optional)
  • 2 tbsp granulated sugar For dusting the cookie logs.

Method
 

Preparation
  1. In a bowl, combine the sugar, butter, and egg yolk until well incorporated.
  2. Gradually add the flour and mix until a dough forms.
  3. Divide the dough evenly and roll it into two log shapes, about 1 inch by 4 inches long. Cover with plastic wrap and chill in the fridge for about 30 minutes.
Baking
  1. Preheat your oven to 350°F (175°C). Once chilled, remove the logs from the fridge and plastic wrap.
  2. On a shallow plate, sprinkle the 2 tablespoons of sugar. Roll the logs in the sugar to coat the outside.
  3. Using a sharp knife, cut each log into 3/8” slices and place them on a parchment-lined cookie sheet.
  4. Bake for approximately 10 minutes or until the cookies are lightly golden and baked through.
  5. Allow the cookies to cool on the sheet for about 5 minutes to set before transferring them to a cooling rack.

Notes

Store cookies in an airtight container at room temperature for up to a week. Dough can be frozen before baking. Monitor baking closely as ovens vary.
