Ingredients
  

Pasta
  • 12 oz Pasta (penne or spaghetti)
Protein
  • 1 lb Italian sausage (dairy-free, can use turkey or chicken)
Vegetables
  • 2 cups Fresh spinach Adds nutrition and color
  • 8 oz Mushrooms, sliced
  • 1 can (14 oz) Diced tomatoes (with juices)
  • 2 cloves Garlic, minced
  • 1 Onion, diced
Condiments
  • 2 tbsp Olive oil Use good quality for better flavor
  • To taste Salt and pepper
Garnish
  • Fresh basil For garnish (optional)

Method
 

Cooking Steps
  1. Bring a large pot of salted water to a boil. Once boiling, add the pasta and cook according to package instructions for al dente, about 8 to 10 minutes. Reserve about a cup of pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and sauté for about 3-4 minutes until translucent.
  3. Add minced garlic and sliced mushrooms. Cook for another 3-4 minutes until the mushrooms are tender.
  4. Add Italian sausage and break it up. Cook until browned, about 5-7 minutes.
  5. Stir in the diced tomatoes and season with salt and pepper. Let it simmer for about 5 minutes.
  6. Add fresh spinach and cook until wilted, about 2 minutes.
  7. Combine the drained pasta with the sausage and tomato mixture. If too dry, add a splash of reserved pasta water.
  8. Serve hot, garnished with fresh basil.
