Cooking Steps
- Bring a large pot of salted water to a boil. Once boiling, add the pasta and cook according to package instructions for al dente, about 8 to 10 minutes. Reserve about a cup of pasta water before draining.
- In a large skillet, heat olive oil over medium heat. Add diced onion and sauté for about 3-4 minutes until translucent.
- Add minced garlic and sliced mushrooms. Cook for another 3-4 minutes until the mushrooms are tender.
- Add Italian sausage and break it up. Cook until browned, about 5-7 minutes.
- Stir in the diced tomatoes and season with salt and pepper. Let it simmer for about 5 minutes.
- Add fresh spinach and cook until wilted, about 2 minutes.
- Combine the drained pasta with the sausage and tomato mixture. If too dry, add a splash of reserved pasta water.
- Serve hot, garnished with fresh basil.
