Preparation
- In a large bowl, combine the peanut butter, coconut flour, and Manuka honey. Mix until a dough starts to form.
- Achieve a firm but pliable consistency by wooshing together the ingredients.
- Take about 1-2 tablespoons of the dough and roll it into a ball. Place it on a plate or small baking sheet.
- Repeat with the remaining dough, spacing the cookies out on the sheet.
- To flatten, press down each ball gently with a fork in both directions.
- Chill the cookies in the fridge for 30 minutes or the freezer for 15 minutes to allow them to set.
- Enjoy as is, or drizzle melted chocolate over the top for added flavor.
