  • 1/2 cup creamy peanut butter Use high-quality peanut butter for best flavor.
  • 1/2 cup coconut flour Can be substituted with almond flour or regular flour.

Method
 

Preparation
  1. In a large bowl, combine the peanut butter, coconut flour, and Manuka honey. Mix until a dough starts to form.
  2. Achieve a firm but pliable consistency by wooshing together the ingredients.
  3. Take about 1-2 tablespoons of the dough and roll it into a ball. Place it on a plate or small baking sheet.
  4. Repeat with the remaining dough, spacing the cookies out on the sheet.
  5. To flatten, press down each ball gently with a fork in both directions.
  6. Chill the cookies in the fridge for 30 minutes or the freezer for 15 minutes to allow them to set.
  7. Enjoy as is, or drizzle melted chocolate over the top for added flavor.
