Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the Greek yogurt, eggs, and potato starch or cornstarch. If you want it sweeter, add honey.
- Mix until everything is smooth and well combined.
- Pour the batter into a greased loaf pan.
Baking
- Bake in the preheated oven for about 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the loaf to cool in the pan for a few minutes. Then, transfer it to a wire rack to cool completely.
Notes
Serve this loaf cake warm or at room temperature. It tastes great on its own or with butter or jam. Store in an airtight container at room temperature for up to 3 days or in the refrigerator for about a week. You can add mix-ins like chocolate chips, nuts, or dried fruit.
