  • 2 cups self-rising flour Or substitute with all-purpose flour, baking powder, and salt.
  • 1 stick frozen butter (1/2 cup); salted or unsalted Use extra melted butter for brushing.
  • 1 cup cold buttermilk Can substitute with milk and vinegar or lemon juice.

Method
 

Preparation
  1. Preheat your oven to 450°F.
  2. Pour 2 cups self-rising flour into a large bowl.
  3. Grate the frozen stick of butter directly into the flour.
  4. Use a pastry cutter to mix the butter until the mixture looks like coarse crumbs.
  5. Stir in 1 cup cold buttermilk until a shaggy dough forms.
  6. Lightly flour a work surface and turn the dough out onto it.
  7. Gently knead the dough a few times until it holds together; it should be slightly sticky.
  8. Fold the dough several times to create layers.
  9. Pat the dough into a 1-inch thick rectangle.
  10. Use a 3-inch cutter to cut out biscuits and place them on a baking sheet so the sides touch.
Baking
  1. Bake for 12–14 minutes until golden on top.
  2. In the last 1–2 minutes, brush tops lightly with melted butter and broil for extra color.
  3. Remove from the oven and brush immediately with melted butter for flavor.
