Ingredients
  

Beans and Lentils
  • 1 cup 15 bean mix Rinse and soak according to package instructions.
  • 1 cup lentils
Vegetables
  • 1 large onion, diced
  • 1 cup celery, diced
  • 1 cup carrots, diced
Protein
  • 1 pound smoked sausage, sliced Can substitute with turkey or veggie sausage.
Spices and Seasoning
  • 2 teaspoons smoked paprika
  • 1 tablespoon chili powder
  • 1 tablespoon dried thyme
  • to taste salt
  • to taste pepper
Broth
  • 6 cups broth (vegetable or chicken) Use low-sodium for best results.

Method
 

Preparation
  1. Rinse and soak the 15 bean mix as per the package directions, usually for about 6 to 8 hours.
  2. In a large pot, heat a splash of olive oil and sauté the chopped onions, celery, and carrots until they are soft, about 5 minutes.
  3. Add in the sliced smoked sausage and cook until browned, letting those flavors deepen.
Cooking
  1. Stir in the soaked beans, lentils, broth, smoked paprika, chili powder, thyme, salt, and pepper. Mix well.
  2. Bring the mixture to a boil, then reduce the heat and let it simmer for about 1-2 hours, or until the beans reach a tender, melt-in-your-mouth texture.
  3. Taste and adjust seasoning as needed. Serve hot in bowls and enjoy!
