- Rinse and soak the 15 bean mix as per the package directions, usually for about 6 to 8 hours.
- In a large pot, heat a splash of olive oil and sauté the chopped onions, celery, and carrots until they are soft, about 5 minutes.
- Add in the sliced smoked sausage and cook until browned, letting those flavors deepen.
Cooking
- Stir in the soaked beans, lentils, broth, smoked paprika, chili powder, thyme, salt, and pepper. Mix well.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 1-2 hours, or until the beans reach a tender, melt-in-your-mouth texture.
- Taste and adjust seasoning as needed. Serve hot in bowls and enjoy!
