The pound cake is aptly named. It consists of four ingredients of equal weight: a quarter of flour, a quarter of butter, a quarter of sugar and a quarter of eggs.
In English, it is called a “pound cake” because, historically, the total of the ingredients was equivalent to one pound (pound).
This is an old recipe that makes a slightly massive cake, ideal for tea and trifles. You could even flavor it with lemon or orange zest.
* Ingredients:
° 5 eggs, separated
° 1 cup unsalted butter, soft
° 3/4 cup sugar
° 2 tsp.Vanilla extract
° 3 1 1/2 cups all-purpose flour
* Preparation:
Preheat oven to 180 ºC .
Butter a 20 10 cm loaf pan.
In a pot, whisking egg whites until stiffing . Reserving .
In another bowl, with the same beaters, whisk the butter, sugar and vanilla extract with an electric mixer until the mixture becomes white. Add egg yolks & keep to beat. Employ an electric mixer, progressively add the flour & blend until just incorporate .
Add half of the egg whites to the previous mixture at low speed. Gently fold in the rest of the egg whites with a spatula, folding them into the dough.
Pour appliance into the mold and level well. Baking in middle of the oven for 41 to 51 min .
