For these Eggnog Crumble Muffins, I swapped out some of the buttermilk/yogurt for eggnog, added a touch of nutmeg, and adorned them with a delightful crumble topping. Eggnog Muffins

Preparation:
- Preheat the oven to 425°F. Generously spray a 12-cup muffin baking pan with non-stick spray or line it with paper cupcake/muffin liners.
Crumble:
- In a microwave-safe, medium-large bowl, melt butter for 60-90 seconds on high power (cover the bowl with a damp paper towel before melting).
- Add sugar and flour to the melted butter, stirring with a fork until well-mixed and forming nice-sized crumbs. Set aside.
Muffins:
- Whisk melted butter with sugar, then add eggs, stirring well to combine completely. Add eggnog, buttermilk, or yogurt and vanilla. Stir until well combined.
- Sprinkle baking powder, baking soda, nutmeg, and salt over the batter. Stir until smooth and lump-free.
- Add flour, stirring just until all flour is incorporated.
- Scoop the batter into the 12 muffin cups and sprinkle each with one rounded tablespoon of the crumble mixture. Pat the crumble lightly to adhere it to the batter.
- Wait 15 minutes before baking the muffins. Lower the heat immediately to 350°F and bake for another 17-20 minutes or until a toothpick inserted into the center comes out clean. Muffins should spring back when lightly touched on the top when done. Allow muffins to cool for 5 minutes in the pan, then remove from the pan to a cooling rack.
Eggnog Drizzle:
- While the muffins are cooling, make the glaze by combining the eggnog and powdered sugar in a small bowl or measuring cup.
- Stir with a fork or small whisk until smooth. Drizzle the glaze lightly over the cooled or just slightly warm muffins.
