Chocolate Coconut Balls

Equipment
- - Blender, food processor, or mixing bowl
- - Plate for freezing
- - Double boiler or microwave for melting chocolate
Ingredients
- 3 cups shredded coconut
- 1 cup almond flour
- 3/4 cup maple syrup or honey/agave nectar
- 1/4 cup coconut milk can use any liquid of choice
- 1-2 cups chocolate chips can use homemade chocolate
Instructions
- In a high-speed blender, food processor, or mixing bowl, combine all your ingredients and blend/mix until a thick dough remains. If it is too thick, add extra liquid of choice.
- Pour the dough into a large mixing bowl. Lightly wet your hands and form small balls. Place the balls on a plate and freeze.
- While the chocolate coconut balls are firming up, prepare your chocolate of choice by melting it. You can melt the chocolate in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
- Moving quickly, remove the coconut balls from the freezer and dip each one in the melted chocolate until evenly coated. Use a fork or a dipping tool to help coat the balls easily. Repeat until all the balls are covered in chocolate.
- Place the chocolate-coated coconut balls on a parchment-lined tray or plate and refrigerate until the chocolate is firm.
