Ingredients

  • 800 g of potatoes
  • 2 eggs
  • 100 g of cooked ham
  • 100 g of cheese
  • 1/2 onion
  • Parsley
  • Salt
  • Pepper
  • 50 g 1/2 cup of flour
  • Olive oil

Instructions

Shred the Potatoes:

  • Start by peeling and shredding the two large potatoes. You can use a box grater or a food processor with a shredding attachment. Place the shredded potatoes in a bowl.

Prepare the Mixture:

  • Add the following ingredients to the shredded potatoes: 2 eggs, 1 cup of diced cooked ham, 1/2 cup of shredded cheese, 1/4 cup of finely chopped onion, 2 tablespoons of chopped fresh parsley, 1/4 teaspoon of black pepper, 1/2 teaspoon of salt (adjust to taste), and 1/4 cup of all-purpose flour.
  • Mix everything together well to form a cohesive mixture.

Heat Olive Oil:

  • In a large skillet or frying pan, heat 2-3 tablespoons of olive oil over medium heat. You want enough oil to coat the bottom of the pan.

Fry the Fritters:

  • Once the oil is hot, you can start cooking the fritters. You can scoop the mixture into the pan using a large spoon and then flatten it to form fritters.
  • Cook the fritters until they are golden brown on one side, usually for about 3-4 minutes.

Flip and Continue Cooking:

  • Carefully flip the fritters over using a spatula and continue to cook them until they are golden brown on the other side, which will take another 3-4 minutes.

Drain and Serve:

  • Once the fritters are cooked through and have a nice crispy exterior, remove them from the pan and place them on a plate lined with paper towels to drain any excess oil.

Serve :

  • Serve your potato and ham fritters while they are still warm. They make a delicious and satisfying snack or side dish.
