RECIPE :
Veggie Cream Cheese Roll-Ups
INGREDIENTS:
- 2 pkg cream cheese, softened, 8 oz
- 1 envelope ranch dressing mix
- 4 green onions, chopped (can also use chives)
- 1/3 c black olives, chopped (I use little can)
- 6 8-inch flour tortillas (can use wheat, spinach, or tomato tortillas)
- 1 celery rib, chopped
- 1/2 c green bell pepper, chopped
- 1/2 c red bell pepper, chopped
INSTRUCTIONS:
- Soften the cream cheese and mix it thoroughly with the ranch dressing packet until smooth.
- Incorporate the chopped green onions and finely chopped assorted veggies into the cream cheese mixture, ensuring an even distribution.
- Spread the resulting mixture evenly over flour tortillas.
- Roll up the tortillas tightly.
- Wrap the rolled tortillas securely in plastic wrap and refrigerate for approximately 3 hours to allow them to set.
- Once chilled, slice the tortillas diagonally into 1/2-inch pieces.
- Arrange the cut pieces on a serving platter.
- For an additional touch, consider serving with salsa on the side for dipping.
