Veggie Cream Cheese Roll-Ups

INGREDIENTS:

  • 2 pkg cream cheese, softened, 8 oz
  • 1 envelope ranch dressing mix
  • 4 green onions, chopped (can also use chives)
  • 1/3 c black olives, chopped (I use little can)
  • 6 8-inch flour tortillas (can use wheat, spinach, or tomato tortillas)
  • 1 celery rib, chopped
  • 1/2 c green bell pepper, chopped
  • 1/2 c red bell pepper, chopped

INSTRUCTIONS:

  1. Soften the cream cheese and mix it thoroughly with the ranch dressing packet until smooth.
  2. Incorporate the chopped green onions and finely chopped assorted veggies into the cream cheese mixture, ensuring an even distribution.
  3. Spread the resulting mixture evenly over flour tortillas.
  4. Roll up the tortillas tightly.
  5. Wrap the rolled tortillas securely in plastic wrap and refrigerate for approximately 3 hours to allow them to set.
  6. Once chilled, slice the tortillas diagonally into 1/2-inch pieces.
  7. Arrange the cut pieces on a serving platter.
  8. For an additional touch, consider serving with salsa on the side for dipping.
