The Perfect Salted Caramel Frosting

INGREDIENTS:

  • 1/2 cup (1 stick or 115gunsalted butter
  • 1 cup (200g) packed light or dark brown sugar (I prefer dark)
  • 5 – 6 Tablespoons heavy cream, divided*
  • 1/4 teaspoon salt
  • 2 and 1/2 cups (240-300gconfectioners’ sugar, sifted
  • optional garnish: salted caramel sauce

INSTRUCTIONS:

  1. Step 1: Make the Caramel Sauce
    1. In a small saucepan over medium heat, melt the butter.
    2. Once the butter is melted, add brown sugar and 2 tablespoons of heavy cream.
    3. Whisk the mixture constantly until the sugar is completely dissolved.
    4. Add a pinch of salt.
    5. Let the mixture bubble for about 2 minutes, whisking every 30 seconds or so.
    6. Remove the caramel from the heat and pour it into a heat-proof mixing bowl.
    7. Allow the caramel to cool for about 30 minutes.

     

  2. Step 2: Prepare the Frosting
    1. Using a hand or stand mixer fitted with a whisk attachment, beat the cooled caramel sauce.
    2. Gradually add 2 cups of confectioners’ sugar and 3 more tablespoons of heavy cream while continuing to beat.
    3. Slowly add an additional 1/2 cup of confectioners’ sugar until you achieve the desired frosting consistency.
    4. If the frosting appears too thick, you can add 1 more tablespoon of heavy cream to reach the desired texture.

     

  3. Step 3: Frost Your Cake or Cupcakes
    1. Once your frosting is ready, use it to frost your cake or cupcakes.
    2. If desired, garnish with more salted caramel sauce for extra flavor.
