The Perfect Salted Caramel Frosting

INGREDIENTS:
- 1/2 cup (1 stick or 115g) unsalted butter
- 1 cup (200g) packed light or dark brown sugar (I prefer dark)
- 5 – 6 Tablespoons heavy cream, divided*
- 1/4 teaspoon salt
- 2 and 1/2 cups (240-300g) confectioners’ sugar, sifted
- optional garnish: salted caramel sauce
INSTRUCTIONS:
- Step 1: Make the Caramel Sauce
- In a small saucepan over medium heat, melt the butter.
- Once the butter is melted, add brown sugar and 2 tablespoons of heavy cream.
- Whisk the mixture constantly until the sugar is completely dissolved.
- Add a pinch of salt.
- Let the mixture bubble for about 2 minutes, whisking every 30 seconds or so.
- Remove the caramel from the heat and pour it into a heat-proof mixing bowl.
- Allow the caramel to cool for about 30 minutes.
- Step 2: Prepare the Frosting
- Using a hand or stand mixer fitted with a whisk attachment, beat the cooled caramel sauce.
- Gradually add 2 cups of confectioners’ sugar and 3 more tablespoons of heavy cream while continuing to beat.
- Slowly add an additional 1/2 cup of confectioners’ sugar until you achieve the desired frosting consistency.
- If the frosting appears too thick, you can add 1 more tablespoon of heavy cream to reach the desired texture.
- Step 3: Frost Your Cake or Cupcakes
- Once your frosting is ready, use it to frost your cake or cupcakes.
- If desired, garnish with more salted caramel sauce for extra flavor.
