INGREDIENTS:

  • 2 cups milk
  • 3 Tablespoons butter
  • 1 Tablespoon active dry yeast
  • 1/2 cup warm water
  • 1/2 cup sugar, divided
  • 1/2 cup honey
  • 7 1/2 cups flour (up to 1/2 cup more or less), divided
  • 2 eggs
  • 2 tsp salt
  • Butter

For the Honey Cinnamon Butter:

 

  • 1 stick (4 ounces) unsalted butter, at room temperature
  • 1/4 cup powdered sugar
  • 1/4 cup honey
  • 1 teaspoon ground cinnamon

INSTRUCTIONS:

Instructions for the Rolls:

  1. In a small saucepan, heat the milk over medium heat until it comes to a boil. Remove it from heat and let it cool slightly. Alternatively, you can heat the milk in the microwave until boiling (about 3 minutes).
  2. In a mixing bowl, combine the yeast, warm water, and 1 tablespoon of sugar. Allow the yeast to bubble and activate.
  3. Add the remaining sugar, honey, warm milk, and 3 1/2 cups of flour to the yeast mixture. Mix these ingredients together for a couple of minutes.
  4. Add the melted butter, eggs, and salt to the mixture. Stir until well combined.
  5. Gradually add more flour, 1/2 cup at a time, until the dough starts to come away from the sides of the bowl. Let the dough rest for a few minutes.
  6. Knead the dough for about 5 minutes. If the dough becomes sticky, you can add more flour a tablespoon at a time, but the dough should remain slightly moist. Avoid drying it out.
  7. Remove the dough from the bowl, grease the bowl, and then return the dough, turning it over to ensure all sides are greased. Loosely cover the bowl with greased plastic wrap and allow the dough to rise until doubled in size, which should take around 45 minutes, depending on the temperature of your environment.
  8. Once the dough has doubled, punch it down to release the air. Turn it out onto a lightly floured work surface and roll it out until it’s approximately 1/2-inch thick. Fold the dough in half to make it about 1-inch thick, then lightly roll it again to seal the two halves together. Cut the dough into approximately 2-inch squares.
  9. Place the dough squares on a greased baking sheet and cover them loosely with greased plastic wrap. Let them double in size again, which takes about 1 hour.
  10. Preheat your oven to 350°F (175°C). Bake the rolls for about 15-20 minutes or until they are golden brown.
  11. Immediately after baking, rub the tops of the rolls with additional butter for a nice finish.

Instructions for Honey Cinnamon Butter:

  1. In the bowl of an electric mixer fitted with the whisk attachment, beat the butter for about 30 seconds, or until it becomes pale in color.
  2. Add the powdered sugar, honey, and ground cinnamon to the butter. Beat until the mixture is well combined, light, and fluffy, which should take about 1 to 2 minutes.
  3. Serve the honey cinnamon butter immediately with the warm rolls. If you have any leftover butter, you can store it covered in the fridge for up to 5 days. Just bring it to room temperature before serving.
