Southern Fried Salmon Patties

- 1 (14 3/4 ounce) canned salmon
- 1/4 cup onion, finely chopped
- 1/4 cup cornmeal
- 1/4 cup flour
- 1 egg
- 3 tablespoons mayonnaise
1. Begin by opening the salmon and draining it thoroughly. Transfer the drained salmon into a mixing bowl and use a fork to evenly flake it.
2. Add chopped onion, cornmeal, flour, mayonnaise, and egg to the flaked salmon in the mixing bowl.
3. Stir the ingredients together until well blended, ensuring an even distribution of all components.
4. Shape the mixture into patties, aiming for a size comparable to an average burger or slightly smaller.
5. Heat oil in a skillet over medium heat. Place the patties in the skillet and cook until each side is nicely browned.
